Hey so i tried them out in a Porsche 911 GT3 R -16
So beta 1: Very weird one i was using 75% car FFB and clipped alot and was just acting weird same with beta 2 similier their but feelt like the FFB just went MIA(missed in action) sometimes if i went higher on FFB car % it was even more clipping and think u suggestion 75-150% so didnt go lower then that. But the beta strong one their i really feelt the the wheel being heavy in corners feelt like i had much more controll on that LUT compared to the others beta 1-2 loved to oversteer and understeer but the sad part about strong one is even their i was on 75% it did clip to but not as much as beta 1-2 and on the straights its like the FFB was kinda gone and just had some rattling from the wheel. I dont know sorry if i am bad at explaing stuff hopefully you understand me if not let me know! Im gonna post screenshots of my settings to. Ohh also the ff_post_process you mention set gamma to 1 but everytime even if i close CM before and then save it as 1 it always goes back to 0.5 when i enter the race (check pic)
If you want me to use wheelcheck or something to give you a idea of my grahps etc let me know to and how i do it

You can ignore the Gamma value. It's not-active, when you're using LUT. It's either Gamma or LUT, not both!
About Clipping: you can ignore that too. Kunos set "100%" to drive ok. Yes, you'll have Clipping in almost every corner, but it's not bad.
Clipping means that your ffb becomes CALM. So when driving over a kerb while Clipping. You won't feel that kerb.
So as long as you feel kerbs and bumps, the Clipping isn't a problem
If your wheel sounds like it would destroy itself, then that is NOT Clipping. That's just Logitech wheels being Logitech wheels.
Don't worry, they are built to last a lot of years!
About your ffb report: Seems like the LUT isn't good for you.
Please download the LUT pack from this download page, set the Gain to 50% and use the "recommended" LUT.
If that is too strong, reduce the gain.
If that still feels bad, we need to use Wheelcheck to find out the real Deadzone if your wheel.
You would need to do the min force test.
Don't touch your wheel, don't have Assetto Corsa open or anything.
Then click in Min force like in my screenshot and the wheel will turn a little bit after a few seconds.
Then you will see a number in the bottom left corner of the program.
