Djon is a very cool track indeed, but I guess it just doesn't fit for F1 cars those days. May be perfect for touring cars, but not really F1 cars.
I've always liked Hermanos Rodriguez with its long straight and the handfull esses, also liked the parabolica (last turn). Was epic to watch when Senna drove, I do really wonder how it would be today.
Zandvoort: Just simply not change it, the layout used today is awesome, just have it as it's. Not change it for anything.
Kyalami: Drove there in a F1 1992 event, and yes the old layout got elevations and are pretty cool. But the changes to the layout may be a bit to much. Because much more of the old path could be used.

But meh, that's my opinions.
