I'd suggest you visit our skin thread - you can submit a skin you'd like to use there, instructions included.

The server automatically gives you a skin. We cant choose. At least not in the servers I was.

The server modes used for our events are specified in the Notes. Some organizers use Pickup mode, drivers can't choose skins, some use booking mode, with which drivers can.
So you were not correct in your assumption for this event.
