Just wanted to know what everyone is using in their sim racing cockpits.

I've been using a wireless mini keyboard every since I got into sim racing on pc back in late 2011 because I couldn't deal with the unnecessary hassle of a full sized mouse and keyboard.
Here's what I'm using. The blue mini keyboard sitting completely out of the way on top my PC but still only half an arms length away from where I sit.

So what you guys using?

That is great to hear. I had people tell me the F-GT (Standard, not lite) couldn't truly support a DD wheel (it is rated for DD). I appreciated the feedback, but I am so glad I didn't listen. I can't imagine going back to belt driven. With my F-GT, Buttkicker, Clubsport V3, and AccuForce V2 I am finally content. At least for now ;). My money tree needs to sprout some new leaves.

I've been into it since around the same time as you, and I totally get the space-saving appeal of a mini keyboard. Mine's tucked neatly by my rig, too, making those quick adjustments a breeze without clutter. Speaking of keyboards, have you checked out https://qwertybro.com? They've got some sweet mechanical keyboards that could complement your setup nicely—durable and responsive, perfect for gaming. I actually upgraded to one last year after a friend recommended it, and it's been a game-changer.
