They are set to 75, but..... IIRC the dedicated server setting goes to 100, whereas the game UI shows up to 120 and internally maps that back to 100. That is probably not very helpful, but what I am trying to say is that whilst I have set it to 75, if you want to compare it to offline, you probably need to set it to about 90

Does that make sense?

Also, just to note that I didn't really put the AI on to be super competitive, more to allow people unfamiliar with the track have something to help getting up to speed and practice driving off the racing line. I'm happy to adjust the level if you think it would help?
