Race 07 then grab AndreasFSC's Super Touring Mod then grab his tracks
Then check his other mods, that should keep you busy for a while.

Looks like I was looking for! I own Race07 with all expansions, will that game allow me to design my own races selecting track and cars?

Yes I think so, you might have to adjust some files for the cars, I tend to just pick a year and the track I want and I really can't remember how you select individual cars. Maybe check with @AndreasFSC
